Nectarine Goat Cheese Tart

Perfect for late summer nectarines or peaches. Flavoring the goat cheese with pesto is a quick way to add a ton of flavor.

Nectarine Goat Cheese Tart

Prep time: 15 minutes. Cook time: 35 minutes. Inactive time: 15 minutes. Yields: 16 servings.


Ingredients

1 sheet thawed puff pastry

5 oz goat cheese, softened

1/2 teaspoon kosher salt

Freshly ground black pepper

2 tablespoons pesto

3 nectarines or peaches

1 egg beaten


Directions

1. Preheat oven to 400°F.


2. Roll out one sheet thawed puff pastry on a floured surface to about 13"×9". Place it on a parchment or silicone lined baking sheet. Score a half inch border all around the dough.


3. In a bowl, combine goat cheese, pesto, salt and pepper.


4. Slice nectarines into slices about 1/8" inch.


5. Spread goat cheese mixture on the base of the dough, top with rows of nectarine slices.


6. Bake for 35 minutes until browned and crispy.


Tips

To guarantee no soggy bottoms, it's best to bake on a dark, well-seasoned cookie sheet. You can also blind bake the dough in the lined cookie sheet by covering it with parchment, then baking for 10-15 minutes, being sure to weighy it down with another cookie sheet. You will need to cool it completely before adding the cheese mixture to it.
