Oats, nuts and dried fruit come together to make the perfect sweet, crunchy snack.
Homemade Granola Bars Ingredients:
1.5 c rolled oats
1 chopped pecans
1/2 c chopped almonds
1/3 c craisins
1/2 c chocolate chips
3/4 c dried apricots
1/4 c maple syrup
2 tbsp coconut oil
1/4 c shredded coconut
Directions:
Preheat oven to 350°F, toast oats and nuts for 10-12 min. Toast coconut separately.
Blend dried fruit, maple syrup and coconut oil until small bits form.
Line a 13 x 9 pan with foil. In a bowl, combine nuts, oats and chocolate chips. Fold in dried fruit mixture and peanut butter.
Press granola into the lined tray, top with shredded coconut. Place foil on top and apply pressure.
Freeze for 30 min. Cut into 1"x 3" bars. Makes about 18.
