Double Chocolate Pancakes

Who doesn't love a pancake? The pancake possibilities are endless!



Prep time: 5 minutes. Cook time: 10 minutes. Yield: 12 or so pancakes


Regular Pancakes


Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

2 tablespoons sugar

2 oz melted butter

1 teaspoon vanilla extract

2 large eggs

1 1/2 cups milk

Butter or canola for cooking


Double Chocolate Pancakes


Ingredients

1 1/2 cups all-purpose flour

1/2 cup cocoa powder

1 tablespoon baking powder

3 tablespoons sugar

1/2 teaspoon salt

2 oz melted butter

2 large eggs

1 1/2 cups milk (use chocolate milk for triple chocolate!)

1/2 cup chocolate chips

Butter or coconut oil for cooking


Coconut Pancakes* (GF, V)


Ingredients

1 cup coconut flour

1 cup GF flour or 1/2 cup tapioca, corn or potato starch and 1/2 cup white rice flour

1 tablespoon baking powder

2 tablespoons sugar

1/2 teaspoon salt

2 oz coconut oil, melted

1 teaspoon vinegar (white or apple cider)

1 teaspoon baking soda

1 1/2 cups coconut milk (plus more if necessary)

Coconut oil for cooking


Directions

1. In a large bowl, whisk together dry ingredients.


2. Pour in the wet ingredients, whisk until smooth. *If making Coconut Pancakes, let batter rest for about 20 minutes before cooking. Otherwise proceed with next steps.


3. In a non-stick skillet, melt butter, canola or coconut oil over medium heat. Using a 1/4 cup measuring vessel, scoop out the batter into the hot pan.


4. Cook the pancakes on one side until bubbles start to form and pop around the edges and in the middle of the pancake. If you are adding ingredients such as chocolate chips, do so before flipping.


5. Flip the pancake and cook on the other side for 2-3 minutes, or until the middle feels cooked through (if you press gently in the middle, it shouldn't feel like liquid batter underneath).


6. Continue cooking the rest of the pancakes, using more oil or butter in the pan if necessary. If the batter gets too thick, thin it out with more milk.


7. Serve with syrup, butter, caramel, honey, berry compote or topping of choice. I serve my double chocolate pancakes with caramel and butter.
